Homemade Smoked Duck Aglio Alio

Hey guys!
I had a stay over at my friend Valerie's house last weekend and we decided to cook a homemade pasta dish for dinner! It was a nostalgic and rather comforting experience for me because i rarely cook.

This recipe serves 5-7 people.

First up, buy some fresh garlic and chop them up!


Peel them and cut them into thick strips.

Don't forget to cook your pasta and drain it well!
(We cooked a whole pack but there were lots of leftovers.)
Remember that it has to be al dente, or the spaghetti will be too soft after frying.
Once the pasta is dry, seperate them with olive oil.

Deep fry the garlic strips in olive oil over low heat and drain dry.
It should be the texture of chips and not have a sticky after feel.

Herbs for seasoning!

Cut a few slices of chili padi for a spicy kick!

Slice your smoked duck breast into thick strips.
We used 2 duck breast for 5 servings.


Lastly, before frying, chop some spring onions (or your own toppings) for that oriental feel.

Time to fry your pasta!
Reuse the oil from frying the garlic and put 1 tablespoon per pasta serving.
Toss in the duck, herbs and ingredients.
Mix well.

You can choose to customize your own pasta!
For instance, mine had red bell peppers and more chili padi!
Valerie's pasta had no herbs and more smoked duck.
It's all up to you!
